I know, I know. You all know how to make cheese on toast: make toast. add cheese. Not hard, right?
This, though, this is Tom Kerridge’s cheese on toast. Which means that it is the actual best ever thing it is possible to do with the combination of cheese and toast. I would not lie to you about this.
How to win at life: make extra. Keep it in the freezer. Suddenly remember about it 3 weeks later.

Enough for 6.
700g strong cheddar
30g plain flour
1tbsp English mustard powder
Cayenne pepper, to taste
Splash Worcestershire sauce
2 egg yolks
300g ham, diced
6 thick slices bread
Heat the cheese and milk gently in a saucepan until the cheese has melted. Add the breadcrumbs, flour and mustard powder and cook, stirring, for another couple of minutes, then add the cayenne, Worcestershire sauce and a pinch of salt.
Tip into a food processor, add the eggs and egg yolks and blend until smooth. Transfer to a bowl and fold through the ham.
Spread thickly onto toasted bread, then grill for a minute or two until the cheese is melted and bubbling. Eat.
