It’s not snowing here, but it’s been increasingly dark and drizzly, and it’s starting to feel like this Sunday’s solstice has been far too long coming. Luckily, this is at its best drunk huddled under a pile of blankets. A fire would be a good addition, or if you have a wood-panelled library you should go and sit in that.

The recipe’s from Molly and Brandon’s craft cocktails column over at Food52, which I miss dreadfully now it’s not running any more. If you haven’t found it yet, it’s worth a visit.

for the syrup
1 earl grey teabag
16fl.oz honey

for each cocktail
ice
2oz scotch whisky
1/2oz earl grey syrup
1/2oz lemon juice
2 dashes bitters

To make the syrup, measure 8oz water into a small saucepan and bring to the boil. Remove from the heat, add the teabag and leave for 10 minutes. Add the honey and stir until dissolved, heating gently if needed. Leave to cool.

For the cocktail, put a couple of cubes of ice into a glass and pour in the rest of the ingredients. Stir gently, and drink.
